Cauliflower Sensation ~ Stuffing Alternative

Servings 6 -8 servings

Ingredients
  

  • 1 head of cauliflower trimmed and cut into pieces
  • 3 stalks celery diced
  • 1 red onion sliced
  • 7-8 baby portobello mushrooms quartered
  • 1 tsp fresh sage chopped fine
  • 1 tsp fresh rosemary chopped fine
  • 1 tsp fresh thyme chopped fine
  • 1 tsp marjoram chopped fine
  • 2 tbsp extra virgin olive oil
  • salt and freshly ground black pepper to taste

Instructions
 

  • Preheat oven to 400 degrees F.
  • Combine all ingredients well and season with salt and pepper.
  • Bake in a casserole dish for about 45 minutes or until all the vegetables are tender and golden brown.
